The Role of Temperature in Fermentation

The major hindrance in the success of fermentation is improper temperature. To put this issue into perspective, you should know that a fermentation temperature set at 75 degrees will ferment more than twice as fast as a fermentation at 70 degrees. It is also important to note that a fermentation temperature of 65 degrees may ferment very, very slowly or worse, it will not ferment at all. Too warm of a fermentation temperature also invites micro-organisms to multiply faster which can eventually spoil the wine or alter the characteristic flavor, aroma and feel of wine.
